Jamaican Christmas Rum Cake is a spiced fruit cake without the chunky fruits found in an American fruit cake. Jamaican Christmas celebration is not complete without a Jamaican Black Cake. Traditionally the fruit in Jamaican Black Cake is soaked in Red Wine and Rum for 6 months or more, then the fruits are placed in a blender to remove all the chunks.
